Caffè Fresco Specialty Coffee Roaster recommends freezing coffee only under certain circumstances. When purchasing a large quantity of coffee that will last you more than 14 days, a Value Package for instance, here's what to do:
Freeze SOME of your shipment. Freezing will stop the roast maturation. Upon receiving your large shipment (usually 2 to 3 days out), set aside the coffee that you plan to use immediately. Place each of the remaining bags in it's own plastic freezer bag and then toss into the freezer. When needed, remove a bag from the freezer and allow it to thaw in the plastic bag for at least 4 hours before opening. NEVER return the once frozen beans to the freezer. The freezer trip is "one-way-out." After the coffee has thawed the roast maturation will commence.
